Why does MAGA always point to one bad apple (out of tens of thousands) as their reasoning to "deport all illegals"? They don't seem to ever use that reasoning for anything else. I wonder what it could be?

This is the person who fired two analysts because they disagreed with the president’s position on Venezuelan gangs.
This is the problem with the Trump administration. The normal people who were around during his first term are all gone now and the only ones left will lie through their teeth without any hesitation to push their agenda. Tulsi Gabbard, the US director of national intelligence, has fired the two highest-ranking officials at the National Intelligence Council (NIC) just weeks after the council released an assessment that contradicted Donald Trump’s justification for using the Alien Enemies Act to deport alleged Venezuelan gang members without due process.
Mike Collins was serving as acting chair of the NIC before he was dismissed alongside his deputy, Maria Langan-Riekhof. They each had more than 25 years of intelligence experience.
Two intelligence officers who spent the majority of their careers in the intelligence services were shown the door because they had the courage to speak truth to power.

You are missing the point entirely. They are getting rid of intelligence agents based upon their political beliefs and not their actual ability. A particular nasty form of DEI. When your intelligence analysts only tell you what you want to hear then you are really screwed. When Director of National Intelligence Tulsi Gabbard tells you that the Los Angeles riots are being coordinated and funded it’s more than likely extremely suspect.
