Actually, from a pure engineering perspective, if you're outside the atmosphere, fins will do nothing except add mass to the vehicle and hence make your acceleration slower, assuming similar thrust between the two vehicles. If you're referring to maximum velocity, again, the fins add nothing but mass, and assuming similar fuel types and supplies, your maximum obtainable velocity will be lower.

Things like a spoiler add to the stability of a car when going high speeds by reducing lift on a car and decreasing drag - ie, they're meant to primarily assist in maneuverability at high speeds as opposed to raw speed.

This is of course, assuming they're properly installed for whatever speed you're planning on going at.

Y'all are missing the point...for a "fin" or a "spoiler" to work like you are proposing, they have to have air (or some other fluid) pushing against them...there's no air outside the atmosphere...they'd do nothing out there but add mass...

Not necessarily true...the only purpose of a spoiler is to reduce overall drag and instability on a particular vehicle by modifying the forces derived from Bernoulli effects on the body...
