As far as the idea that men who don't mind getting with a woman above the age of 50 should have an easy time getting laid, I'm a 34 year old man who prefers significantly older than me, yet I still have a hard time getting laid.
You're right when you say if you have a 1 night stand with a woman you meet at a bar, you could simply erase her from your life the next day. Yet there are still a number of reasons doing the escort game is different than getting with a civvie.
For one, you get guaranteed sex with an escort. With bar pursuals, there's no telling how many nights you'll waste hunting for tail at bars, only to go home empty-handed.
Furthermore, bar pursuals run the legal risk of mixing alcohol with sex. With an escort, even if exchanging money for sex is technically illegal, you won't face any charges as long as she doesn't turn out to be an undercover cop. With bar pursuals, on the other hand, you have to wonder if she'll come out of the woodwork years later to say she couldn't consent to the sex with you because she was drunk.

Your mileage may vary I suppose. For you, getting with escorts might have given you more confidence to approach civvies. With me, the total opposite ended up happening.
I got with my first escort at 23. I then did a grand total of zero askouts/pursuals from the ages of 24-32 (Although I did some flirting during those ages...I even managed to get free sex from a hottie who worked in my condo building when I was 29
without having to ask her out or pursue her. That was my 1 and only instance of free sex in the past decade)
Only at 33 did I finally begin pursuing/asking out again (with extremely limited luck though; all I've gotten from my new wave of askouts is 1 sexless date)
Since you mentioned leagues/pickiness, there's another thing I should mention. Even though I have no doubt a lot of men use escorts as a loophole to get laid by a woman hotter than him, a majority of the escort sex I've had has been with escorts whose looks are equal to or below mine.
On the other hand, in addition to looking better than me, that employee of my condo building I had free sex with 5 years ago looked better than most escorts I've been with. Go figure.
